Eat your greens - Episode II

With spring in full bloom getting more of those fresh veggies and fruits can feel a whole lot easier! Something about the sunshine and vibrant colours makes you crave the crisp, juicy and tasty treats at your local farmer's market!

We love this recipe by Joanna Cismaru from Jo Cooks! Weeknight dinner or weekend entertaining at its finest (and healthiest!)

Mediterranean Grilled Chicken Salad

  1. Grab some ready-to-eat salad mix: we opted for a local organic spring mix with red and green lettuce, spinach, arugula and baby kale.

  2. In a bowl, combine coarsely chopped garlic, parsley, 2 tablespoons Sahara Delights Olive Oil, 2 tablespoons Sahara Delights Date Vinegar, salt + pepper to taste, and dried or fresh cilantro.

  3. Grill 1-2 chicken breasts/boneless and skinless thighs. Season to taste.

  4. Add toppings as desired, goat cheese, cucumbers, cherry tomatoes, red onions, pumpkin seeds, avocado, beans, or if you're feeling adventurous sprinkle some coarsely chopped Sahara Delights Deglet nour dates!

  5. Toss and enjoy!
